Gingerbread Cookies

Holidays are a special and meaningful time filled with connection and cheer! Gingerbread Cookies were one of my favorite holiday cookies growing up!
Since embodying a plant-based lifestyle I have recreated a GF Vegan recipe that is absolutely exquisite and I am so excited to share it with you!

Dry Ingredients

1 Cup GF Oat Flour

1/2 Cup Brown Rice Flour

1/2 Cup Tapioca Flour

1 tsp Baking Powder

1/2 tsp Baking Soda

1 tsp Cinnamon

1/2 tsp Ground Ginger

Wet Ingredients

1/2 Cup Coconut Sugar

1/4 Coconut Oil, Melted

2 Tbsp Molasses

1/4 Cup Oat Milk, more as needed

Instructions: Preheat oven to 350°F. Line a baking sheet with parchment paper. Whisk the wet ingredients together until smooth. Combine the dry ingredients and mix to evenly combine. Slowly add the dry ingredients to the wet mixture, stirring consistently to ensure even mixing. Chill the dough in the fridge for at least 15 minutes. Roll dough into golf ball sized balls and place on parchment lined baking sheet. Bake for 10-14 minutes, until gold brown on the bottom.
