I have been passionate about food for as long as I can remember. It’s one of the main reasons I chose not to pursue my M.D. — because the traditional medical curriculum includes only about six hours of nutrition. Even then, it’s often taught through the lens of calories, macronutrients, and pharmaceuticals — not healing, vitality, and energy. I’ve always known food to be the foundation. It was through food that my own healing began.
But as I started to learn and research more deeply, what I discovered both surprised and upset me. The deeper I looked, the more I saw how much of what we’ve been told about “healthy” eating isn’t rooted in truth — but in transaction, tradition, marketing, and misunderstanding.
We’ve been conditioned to believe:

* Dairy is for calcium.
* Meat is for iron.

To neutralize that acidity, the body draws calcium out of the bones — leading to the very depletion we’re trying to prevent.
